Healthy Vegan Gluten-Free Raspberry Muffins

Yaaay! I’m finally sharing my vegan, gluten and refined sugar-free raspberry muffins recipe which I posted on my Instagram last week and some of my followers requested it. This took sooo long to get up because first, I actually lost my recipe and only realised this when I went to film it today! I usually write my recipes in my notes on my iPhone and somehow this particular recipe disappeared! After trying so many different backup options to try to restore it, I just couldn’t find it anymore. So I didn’t have my final version but luckily I still had my first version with some notes but that was kind of illegible so I had to improvise a lot. But funnily enough that this time when I made these muffins, they probably turned out the best! When I look at the pictures of my other muffins, I realise that they rose and stayed a bit higher as they were more dense. But these ones taste slightly better and are fluffier on the inside. I believe the difference is that in this recipe I’m using 1/2 cup of almond milk and in the denser ones 1/4 cup. So if you want a denser higher muffin, try 1/4 cup of almond milk.


Secondly, I had major problems with recording my voiceover in iMovie as there were input problems with my microphone so I basically couldn’t record it! Anyway after a lot of hustling I finally got my recipe video up and I’m so excited to share it with you because these muffins are awesome! They are vegan (therefore eggless), free of gluten and refined-sugar but they taste so yummy and are fluffy and moist on the inside. There are also little pops of raspberry in there which I love! If you like you can use fresh raspberries or other berries you like. You could even leave out the berries but I like to leave them in there for this particular recipe. I’m also using unsweetened almond milk but have also used soy milk in this recipe and both are great. You could use any kind of vegan milk you like.


In other news today my boyfriend wanted some sweets badly… unhealthy ones. But since we didn’t have ingredients to make that he decided to make my healthy banana oatmeal cookies and loved it! He watched my video, read the recipe on my blog and even added his own touch to it (aka peanut butter) and thinks it’s better than mine. Hahahaha!   1. Chia egg (1 tbsp chia seeds + 3 tbsp water)
  2. 1/2 cup cornmeal
  3. 1/2 cup almond meal
  4. 1/4 cup rice flour (regular, not glutinous)
  5. 2 tsp baking powder
  6. Pinch of cinnamon powder
  7. Pinch of salt
  8. 1 tsp vanilla essence
  9. 1/2 cup unsweetened almond milk (or other vegan milk, reduce to 1/4 cup for a denser, higher muffin)
  10. 1/4 cup agave (or other sweetener)
  11. 2 tbsp coconut oil melted
  12. 1/2 cup frozen raspberries (or fresh or other berries)
  1. Preheat your oven to 190 degrees celsius or 380 degrees fahrenheit with the fan-forced setting.
  2. Make your chia egg by mixing chia seeds and water. Set it aside while it thickens up.
  3. Mix all of the dry ingredients together until well-combined.
  4. Add in the vanilla essence, almond milk and agave. Mix well to combine.
  5. Add in the melted coconut oil and mix.
  6. Mix in the chia egg.
  7. Mix in the frozen raspberries.
  8. Pour the batter into paper muffin liners and bake for around 27 minutes until the tops are golden.
