15 Minute Vegan Ratatouille Lunch Idea for Work

Today’s recipe is inspired by one of my lovely followers on Instagram! She asked me if I could come up with some quick vegan lunch ideas for work so I came up with this vegan ratatouille! It’s so easy and quick to make as it only takes 15 minutes including preparation time and has loads of flavour! I’m using a frozen vegetable mix for this dish consisting of carrots, cauliflower and broccoli and I would really recommend the last two vegetables as they cook very quickly and soak up all of the flavour from the sauce! This dish is very versatile though as you can use your favourite vegetables and herbs in it and it’s also great as a quick lunch or dinner at home if you’re low on time. You can of course also use fresh vegetables but then it would take you a bit longer to make. My recipe makes one serving as I came up with this for people to take to work but you can of course increase the measurements to make more servings!   1. 1/2 tbsp olive oil
  2. 1 small bay leaf
  3. 1/4 tsp dried basil (or other herbs)
  4. 1/4 tsp dried thyme (or other herbs)
  5. 1/4 tsp garlic powder
  6. 1/4 tsp onion powder
  7. 1/2 a 400g can of whole tomatoes
  8. 1/2 tbsp red wine
  9. 1/2 cup hot vegetable broth
  10. 1 cup mixed frozen vegetables (broccoli and cauliflower recommended)
  11. 1/2 a 400g can of white beans rinsed and drained
  12. 5 black pitted olives + 1/2 tbsp olive juice
  13. 1 tsp agave (or other sweetener)
  14. Black pepper
  15. Salt
  1. In a hot pan on medium-high heat, add in the olive oil, dried herbs and garlic and onion powder. Work fast so that the herbs don't burn.
  2. Add in the canned tomatoes along with the tomato sauce. Crush the tomatoes with a fork to break them up.
  3. Add in the red wine and hot vegetable broth and mix everything.
  4. Turn the heat up to high and add in the frozen vegetables and white beans and mix everything together.
  5. Add in the olives, olive juice, agave, salt and pepper and mix.
  6. Depending on how hot your stove is, turn the heat down to medium or medium-high and let the ratatouille simmer for around 10 minutes until the liquid is reduced and the vegetables are cooked. Stir occasionally so the vegetables don't stick to the pan or burn.
  7. When the ratatouille has cooked down to your desired consistency, turn the stove off and discard the bay leaf.
